The number of North Atlantic swordfish was shrinking fast due to over fishing. So in 1998 a group of restaurant chefs decided to do something about it. These chefs had always enjoyed eating swordfish and serving it to their customers. But they knew they couldn't, in good conscience, continue to serve swordfish, so they removed all Atlantic swordfish from their menus—and educated their customers about why they were doing it.

As word spread, more than 700 other chefs joined in a temporary boycott. In order to have swordfish in the future, chefs and customers were willing to give it up now.

Some people complained that the boycott hurt fishermen and saving swordfish was a lost cause. But 4 years later a report showed that the North Atlantic swordfish population had bounced back to a whopping 94% of healthy levels! The effort by the chefs and their customers had paid off.
